You also can do a quick pickle on most any veggie you have in your frig. It’s very simple and easy.
Trim and wash veggies. Put them in the jar and pour the leftover pickle brine over them. Cover and put in the refrigerator for 1 week. They are ready to enjoy. You can store for 6 months in the refrigerator.
Quick pickles are great to use as a snack food or as a plate garnish. I like to use the leftover brine from pickled beets. Brined onions are my favorite. They are wonderful piled on a sandwich. So colorful! (Thanks to D. Foster for culinary expertise)
